Ingredients
- 500 g pork fillet, thinly sliced
- 4 Tbsp. Shaoxing cooking wine
- 2 Tbsp. soy sauce
- 1 large piece fresh ginger, peeled, finely grated
- 2 cloves garlic, crushed
- 2 Tbsp. peanut oil
- 500 g green beans, trimmed, halved
- 2 shallots, finely sliced
- 4 kafir lime leaves, thinly sliced
- Coriander leaves and stems
- 4 Tbsp. double burn chilli jam
- steamed rice, to serve

Step by Step Instructions
Step 1
In a bowl, combine pork, Shaoxing, soy, ginger and garlic. Set aside 20 minutes.
Step 2
Heat oil in a wok or large frying pan on high. Drain pork, reserving marinade. Stir-fry, in two batches, 2-3 minutes each, until well browned. Transfer to a plate.
Step 3
Add beans, shallots to wok. Stir-fry 1-2 minutes. Pour in combined chilli jam, kafir lime leaves and reserved marinade.
Step 4
Bring to a rapid boil. Stir-fry 1 minute. Return pork to wok. Bring back to boil.
Step 5
Cook 1-2 minutes, to heat through. Sprinkle with shallots, coriander leaves. Serve with steamed rice.
